SCOBY Formation

A SCOBY (Symbiotic Culture of Bacteria and Yeast) grows as a cellulose pellicle on the tea surface. Acetobacter bacteria weave cellulose nanofibers while yeasts below produce ethanol and CO2. The pellicle thickens at ~1mm/day at 25C. Watch the layers form as acetic acid accumulates.
